The kitchen at Bamboo Cottages cooks the way the island eats: fresh, close to the source, and without hurry. Fish arrives with the boats each morning. Herbs and greens come from gardens a short ride inland. Fruit is picked ripe, which is why our pineapple ruins all other pineapples for you, possibly forever.

Meals are built around vegetables, seafood and rice, with Vietnamese classics sharing the table with lighter fusion dishes. Vegan and vegetarian menus are not afterthoughts; they are planned with the same care and the same market trips. Guests with allergies eat confidently, the kitchen knows every dish by heart.

We serve portions that respect an afternoon in a hammock, and we happily feed hungry surfers twice. Cooking classes run twice a week for guests who want to take the flavors home, from market bargaining to the perfect fish caramelized in clay pot.

Juices and smoothies lean green. Desserts lean tropical. Alcohol is available but never pushed, and many guests discover they do not miss it once the smoothies start. Nutrition here is not a regime. It is the pleasure of eating exactly what the season, the sea and the soil agreed to offer.
